Zaatar pumpkin seed wraps

Ingredients

Makes 6

1 cup (140g) of pumpkin seeds

3 tbsp (18g) of psyllium husk

2 tsp of Zaatar

1/2 tsp of salt

1/2 cup (115ml) of warm water

Instructions

1) Pulse the pumpkin seeds in a food processor until ground into a fine flour. In a medium bowl, combine the pumpkin seed flour, psyllium husk, zaatar and salt.

2) Slowly incorporate water into the mixture with a whisk or fork, and shape the dough into a ball with your hands. Cover the bowl and let the dough rest for 10mins.

3) Heat a non toxic, non stick pan over medium/low heat. Cut the dough into four equal pieces and shape them into balls. Place one ball between two pieces of parchment paper. Use your palm to press the dough down and roll it out evenly with a rolling pin (you do not want the dough to be too thin or it will crisp while cooking). Cut out the wrap using a bowl/plate and a knife, and keep excess dough to form another ball.  Repeat with all balls until you are all out of dough.

4) Cook each wrap for 1 min on each side until lightly golden brown. Transfer to a plate, let cool and enjoy.
