Chocolate date eggs

Ingredients

Makes 30 eggs

  • 1/4 cup (70g) of nut butter of choice

  • 1 tbsp + 2tsp of coconut flour

  • 30 small soft dates, pitted

  • 100g of dark chocolate (minimum 70%)

  • Flaky sea salt

Instructions

1) In a small bowl, combine the nut butter and coconut flour.

2) Open the dates and add a teaspoon of the nut butter mixture in the middle. Close the date and shape into an egg.

3) Melt the chocolate in a bain-marie, in a heat proof bowl. Once melted set the bowl aside. Prepare a platter/plate lined with baking paper. Dip the dates into the melted chocolate one at a time, and toss with forks so that the dates are well covered. Take out the dates with the forks and place them on the lined platter. Place the platter in the fridge and let the eggs set for 30mins.

4) (This step is optional) Once the eggs are set, remove them from the fridge and decorate them by drizzling extra melted chocolate on top. Sprinkle some flaky sea salt on top, and place back in the fridge to set for 10mins. 

* You can keep the eggs in the fridge for a week
