Chipotle chicken with mango salsa

Ingredients

serves 4 (or 2 for meal prep)

For the chicken:

2 tsp of chipotle powder
1 tsp of garlic powder
Pinch of salt
Pepper to taste
4 free range organic skinless chicken breasts
Extra virgin olive oil for cooking

For the mango salsa:

1 mango 
1 red bell pepper
1/2 a red onion
1 avocado
1 handful of fresh coriander 
Juice of 1 and 1/2 lime
1/2 tsp of chipotle powder

Rice, quinoa or millet for serving

Instructions

1) In a small bowl, combine the chicken spices. Sprinkle and rub in the seasoning on both sides of the chicken breasts and set aside in the fridge.

2) Finely chop the mango, red pepper, red onion, avocado, and coriander. Combine in a bowl with the lime juice and chipotle powder.

3) Heat olive oil in a pan over medium heat. Cook the chicken breasts on both sides until well cooked through ( about 4-5 mins on each side). Once cooked, let the chicken rest for 3mins on a cutting board, then slice it.

4) Serve the chicken on your preferred grain, topped with the mango salsa, and a squeeze of lime.
